We're planning to start sleep training this weekend, using the Ferber check & console method. Currently, our 5-month-old often awakens to feed 1-2 times a night, and most days she wakes up maybe once or twice in addition to those times. 

Our goal isn't so much to reduce the number of night wakings but mainly to teach her to fall asleep on her own without having to be picked up and rocked. 

She typically needs to be held/rocked/patted until asleep for all naps, and at bedtime, and during the night at non-feeding times. 

However, after feeds, she tends to fall back asleep pretty easily. Sometimes, it's due to pacifying, but most times she feeds till she's just full, unlatches herself, and falls asleep. I'm wondering whether I should let her continue to do that during the sleep training, since those are the only times she falls asleep or nearly falls asleep at the breast? Or should I awaken her in order to put her down awake and start the check & console cycle, as prescribed by the method?

It sounds like your daughter is well on the road to learning to fall asleep on her own! You do not need to awaken her completey every time after a feed, and I am sure you have heard of trying to get her to be "drowsy but awake." You will not want her to be asleep, but do want her sleepy. It is often a bit different for each baby/family, as some will get quite annoyed with being aroused, while others need some stimulation or they are just out like a light at the breast or bottle. A few hugs and kisses and goodnights may be enough stimulation to get her to the optimal "drowsy but awake" state, you may have to play around with it a little.
